 Just mix 1 egg, milk, flour, yeast and bell peppers. You won't be able to stop at one:
INGREDIENTS
1 egg
200ml (4/5 cup) milk  
 200ml (4/5 cup) lukewarm water  
10g dry yeast  
1 tbsp sugar
1 tsp salt  
540g (4 1/3 cups) flour  
1 potato, chopped
1 red pepper, chopped
2 green peppers, chopped
1 onion, chopped
2 tbsp parsley, chopped
80g mozzarella, chopped

METHOD
In a bowl mix together milk, water, sugar, egg, and yeast. Add in flour and salt. Let rest for 1 hour, or until doubled size.
Mix in chopped vegetables and mozzarella.
Fry fritters in hot oil until golden brown.
