This is a simple and easy keto lunch recipe. It's one of my favorite keto lunch recipes because it's super hearty, and I can make it ahead of time. I also love how customizable this recipe is- you can use different ingredients or even add in some chicken if you want meat in your soup. The best part about this soup is that it's so easy to make and super low carb too which makes this the perfect keto lunch for my daily life.

I start by seasoning chicken with salt and pepper, then fry it up in a little bit of oil until cooked through. After that, I toss everything into the slow cooker, including diced tomatoes, onion, garlic, salt, pepper (or other herbs), water, and cumin.

Ingredients:
50g diced Chicken Breasts
2 Tbsp diced White Onion
1 Tbsp diced Red Bell Pepper
1 clove Garlic, crushed
1 Tbsp minced Jalapenos
1.5 cups Chicken Stock
1/3 cup sugar-free Tomato Sauce
1 Tbsp Olive Oil
2 tsp Taco Spice Mix
50g diced Avocado
Fresh Cilantro for garnish

Procedure:


1) Sear chicken pieces slightly in olive oil.
2) Add garlic, onions, bell peppers, and jalapenos. Sweat until aromatic.
3) Add spice mix, stock and tomato sauce. Simmer for 10-15 minutes.
4) Ladle into a bowl and top with avocados and cilantro.
